Minstrel Overload Chocolate Chip Cookies

  • 2 1/4 cups self raising flour
  • 1 Β½ Cups light brown sugar
  • 118g (big bag) Minstrels chopped
  • 1/2 tsp baking soda
  • 1 cup soft & unsalted butter (Lurpack)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tsp ground sea salt
  1. Β Preheat oven to 160 degrees & Grease non stick baking sheet
  2. Mix the flour and baking soda
  3. With your stand mixer beat butter, eggs, sugar, vanilla and salt
  4. Add the flour mixture to the fluffy liquid mixture and mix
  5. Add the minstrels
  6. Use an ice cream scooper to divide each cookie dough, roll into a circle and slightly press to flatten on baking sheet
  7. Bake for 12 minutes (I don’t like to fully cook the cookie because it dries up fast that why I take it out a couple of minutes earlier)
  8. Let it cool on cooling rack
