Low Fat Chicken Curry

This is a deliciously guilt free version of Chicken Curry

I created this dish for those of you who love a heart warming dish without all the fat!

For this reason, you don’t need to worry about making this recipe and devouring it which makes it even more desirable!

I have made a variety of chicken curries, and I have found that all are delicious but not all of them should be part of your regular diet.

Grocery list

  • 3 medium sized onions chopped finely
  • 5 garlic pieces made into garlic paste 
  • 2 skinless chicken breast cut into small cubes
  • 3 tbsp of curry powder (chilli delends on you but I used barts medium curry)
  • 1 chicken stock cube
  • 1 large skinned potatoes cut into cubes and boiled
  • 2 tsp cumin powder
  • 1tsp paprika powder
  • 2 tsp coriander powder
  • Handful of fresh coriander (3/4 chopped & the rest garnish)
  • 2 tbsp of Greek style yogurt 
  • Chopped Scallions
  • Salt and pepper
  • Serve with steamed basmati rice or brown rice

For the method

  1. Fry the onions in half a tablespoon of vegetable oil until golden and add garlic paste
  2. In another pot, boil the potatoes the potatoes 
  3. Grill the chicken cubes on a grill or pan then mix with the onion and garlic
  4. Add 2 cups of boiling water
  5. Add the chicken cube
  6. Add the curry powder, cumin powder, paprika and dried coriander 
  7. Add the yogurt 
  8. Add water as you go to the dish if it gets really thick and if it’s very liquid add flour 
  9. At the very end, add the boiled potatoes and freshly chopped coriander
  10. Serve with rice
  11. Garnish curry with the chopped coriander and chopped scallions
